Steamed Clams Cortazzo

Ingredients

¼ Cup Extra Virgin Olive Oil
½ Red Onion, Finely Chopped
4 Cloves Fresh Garlic, Thinly Sliced
2 Scotch Bonnet Peppers, Finely Chopped
1 Bunch of Chives, Cut Into 1 Inch Lengths
2 lbs. Topneck Clams, Scrubbed
(soak clams in cool water for 5 minutes rinse and repeat, to remove grit)
2 Cups Dry White Wine
½ Cup Cortazzo Arrabbiata Sauce
Kosher Salt & Freshly Ground Black Pepper, to Taste
1 Loaf Crusty Italian Bread


Preperation
1. In a large skillet with lid*, heat olive oil over high heat until almost smoking. Add the onion, cook for 3 minutes until softening occurs. Add garlic and cook 3 minutes until both are soft and lightly browned, being careful not to burn your garlic. Nothing will ruin a dish faster than burnt garlic. Add the Peppers, ½ of the Chives, the Clams, White Wine and Arrabbiata Sauce and bring to a boil. Cover and cook until all Clams steam open*, about 5 minutes. Discard any unopened Clams. 

2. Season Broth with Salt & Pepper. Divide the Clams and broth evenly into four large bowls, finish with remaining Chives and serve with bread**. 


Notes:

* To help make sure Clams open properly, do not over crowd your skillet, the weight of excess Clams will hinder them from openly properly. 


** To add an extra touch to your bread, slice your baguette bread on a bias about 1 ½” – 2” thick, rub with olive oil and season with Salt, Pepper & Garlic, and place on grill until crispy and slightly charred.

Chef Scott Martino's Cookin' Somthing Good In Lancaster

It's not often that an innkeeper can get away in the fall. Ah, but a bit of planning paid off last week when I attended a cooking class with Scott Martino at the Good Cooking Store in Intercourse. You may remember that I met Scott on my first visit to this store -he was handing out samples of his Italian spaghetti sauces.







The setting is delightful - Upstairs on the second level of the store is a state-of-the-art kitchen complete with TV screens and room for 18 of your closest friends. Scott started out by saying that he's not a typical chef with an ego that fills the room. We were encouraged to ask any kind of cooking questions during the whole process. This casual atmosphere gave us time to jot down some notes...while being served a three-course dinner. 

Dinner was Radish and Cranberry Salad with Goat Cheese and Black Pepper, Pan Seared Diver Scallops with Sweet Pea and Asiago Risotto and....my favorite....Chocolate and Valoplicella Creme and Fresh Whipped Cream. Yum!

Scott was trained in the classic French style - hot pans to sear and seal in the juices and finishing in the oven. I had taken cooking classes a long time ago at a French restaurant that used the same technique. However, this kitchen had brand new All-Clad cookware which stood in stark contrast to the beat-up pans of my favorite French restaurant from long ago.

                

Scott's advice was that the most important thing is to cook love into everything you make - don't just follow recipes....taste...adjust...love the food. And remember that butter is better. I soooo agree! He also talked a lot about working at various restaurants like the Loft and Doneckers, passing along little tricks of the trade.

A few weeks ago we mentioned a fabulous barbecue sauce that we use in our Quickie Barbecued Chicken recipe. We love this brand of sauces so much that it is time to share them all with you!

The sauces are from the Cortazzo company and are made right here in Lancaster County, PA, by Chef Scott Martino. He has been a chef in some of Lancaster County’s finest restaurants. A few years ago he started his own company, making tomato sauces and barbecue sauces based on his family’s recipes.

He offers three types of tomato sauce: a mild “Marinara Sauce” with a perfect balance of vegetables and seasonings; a spicy “Arrabbiata Sauce” based on his grandmother’s recipe; and his newest, a “Pomodoro Sauce,” all fresh and herby-tasting .

Chef Martino also just developed two barbecue sauces: the appropriately named “Awesome in a Jar,” which has a sweet flavor, and the “Carolina Peakes,” a mustard and vinegar-based mix.
